White Chocolate Cake
1/3 cup chopped white chocolate
1 cup unsalted butter, softened
1 ½ cups sugar
4 large eggs, separated
1 teaspoon vanilla
2 ½ cups sifted all purpose flour
1 tsp baking soda
1 cup buttermilk
Melt chocolate in small saucepan or skillet over medium heat. Beat butter and sugar until creamy. Add egg yolks, 1 at a time, until mixed well. Add melted white chocolate and vanilla.
Sift flour and baking soda together and add to butter mixture alternately with buttermilk.
Beat egg whites until stiff peaks form and fold into batter. Pour batter into well greased 12” Dutch oven and bake for 45-60 minutes over medium heat; adding top coals after 15 minutes. Remove from oven and allow to cool. Slice cake horizontally into 3 layers and frost cake with White Chocolate Frosting.
White Chocolate Frosting
¾ cup sugar
2/3 cup heavy cream
6 tablespoons unsalted butter
3 cups white chocolate morsels
2 ¼ teaspoon vanilla
Bring sugar, cream and butter to a full rolling boil over medium high heat; boil 1 minute. Remove from heat.
Combine chocolate and vanilla in a medium bowl. Pour hot butter mixture over chocolate and stir until chocolate is melted. Allow to cool for approximately 15 minutes. Beat frosting at high speed until completely cool and thickened to spreading consistency.
