Strawberry Bread

3 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
2 cups sugar, divided
2 pints fresh strawberries, chopped
4 eggs, beaten
¼ cup vegetable oil
1 cup chopped pecans

Sprinkle 1 cup sugar over chopped berries, stir to mix and let stand until juice forms, about 45 minutes. Combine flour, baking soda, salt, cinnamon and 1 cup sugar. Set aside
Add strawberries to dry ingredients with eggs and oil; stir to moisten flour. Gently stir in pecans.

Pour into well greased Dutch oven and bake at over medium heat with top coals for 1 hour and 20 minutes. Cool before cutting.
