Skillet Blueberry Cobler

¼ cup butter, melted

1 ¼ cup sugar

1 cup self rising flour

1 cup whole milk

1 cups fresh blueberries, stems removed, rinsed and patted dry


Place butter in 10 inch cast iron skillet, place over medium heat until butter is melted.  While melting butter, in a medium bowl whisk 1 cup of sugar with the flour and milk until smooth.  Swirl melted butter around sides of skillet to coat the bottom and sides.  Pour the batter into skillet and sprinkle the blueberries evenly over the top.  Sprinkle the remaining ¼ cup sugar.  Place lid on skillet add top coals and bake at 400 degrees for about 45 minutes to 1 hour or until golden and bubbly.
