Cowpoke Taters
2-3 pounds new red potatoes, cut in bite size chunks
1 sweet onion, chopped large
1 green bell pepper, chopped large
1 red bell pepper, chopped large
2 teaspoons Garlic and Herb Seasoning
2 garlic cloves, chopped
2-3 tablespoons oil (vegetable or olive)
salt and freshly ground black pepper to taste
Combine all vegetables together after chopping. Add oil and seasonings and toss to cover well. Using a sharp instrument poke several holes in the bottom of a disposable aluminum pan. Pour potato mixture into pan and cover with foil. Bake over medium heat for approximately 1 hour or until all vegetables are tender.
