Marinated Vegetable Salad
1 packet Garlic and Herb Blend Dressing Mix
¼ cup oil
3 tablespoons vinegar
2 tsp sugar
1 medium zucchini thinly sliced
1 medium yellow squash thinly sliced
1 medium cucumber thinly sliced
½ medium purple onion thinly sliced
1 red bell pepper thinly sliced
1 cup cauliflower florets
1 cup broccoli florets
1 cup cherry tomatoes cut in half
2 tablespoons coarsely chopped parsley
Mix garlic and herb seasoning with oil, vinegar and sugar until blended well. Set aside. Combine thinly sliced vegetables, cauliflower and broccoli florets, cherry tomatoes and parsley. Pour dressing mix over vegetables and toss to coat well. Refrigerate for at least 1 hour prior to serving.
