Old Fashioned Beef Stew

Old Fashioned Beef Stew

2-3 lbs stew meat trimmed of excess fat

¼ cup vegetable oil

1 cup flour

1 tsp salt

1 tsp black pepper

1 tbs granulated garlic

4 stalks celery diced large

2 onions sliced thick

2-3 cloves garlic peeled

1 tbs beef base

2 qts water, to cover beef

1-2 lbs baby carrots

4-5 russet potatoes, peeled and cubed

Mix flour, salt, pepper and garlic in plastic bag and combine well.  Add stew meat in batches to coat well.

Heat oil in large Dutch oven over medium-high fire and brown stew meat in batches until all meat is browned.  Add onions, celery and garlic to Dutch oven and cook until tender.  Return stew meat to oven, add water and beef base and bring to boil.  Add carrots after beef has begun to tenderize, cover and continue cooking over medium to medium low heat until carrots are tender.  Add potatoes and cook until potatoes are tender.  Serve with Sweet Potato Biscuits.
