Mushroom Gravy

1 medium onion sliced thin

1 16 ounce package of sliced mushrooms

¼ cup all purpose flour or as needed

¼ cup butter

1 quart of beef stock

salt and pepper to taste


Melt butter in a skillet.  Saute onions and mushrooms until tender.  Add flour and cook for about 5 minutes, until it makes a roux.   Gradually adding beef stock and whisk  until smooth and creamy.  Allow to thicken slightly and serve.
