Lemony-Lemon Cake
1 pkg lemon cake mix
1 pkg (3 oz.) lemon flavor gelatin
1-1/4 cups water
½ cup oil
4 eggs
1/4 cup poppy seed
½ cup cream cheese spread
2 tablespoons butter, softened
1 cup powdered sugar
2 tablespoons lemon zest
1 tablespoon lemon juice
Beat first 5 ingredients in large bowl until well blended. Stir in poppy seed. Spray inside of tube pan with Baker’s Joy. Pour cake mix into pan and place on top of baker’s rack in a 12” deep Dutch oven.
Bake over medium heat adding top coals after about 15 minutes for approximately 1 hour or until knife inserted near center comes out clean. Remove from Dutch oven and allow to cool prior to removing and icing.
Beat cream cheese spread and butter with mixer until well blended. Gradually beat in powdered sugar and lemon juice. Spread over top of cake and garnish with lemon peel.
