Lemon Rice Pilaf
4 tablespoons butter
4 stalks celery, sliced
8 green onions, chopped
4 cups cooked white rice
3 tablespoons grated lemon rind
salt and freshly ground pepper to taste
Cook rice according to directions and hold warm. Saute celery and onions in butter until tender in a 12” skillet. Stir in rice and grated lemon rind and cook until seasonings have blended and rice is heated through.
