Italian Chicken & Vegies


4-6 boneless skinless chicken breasts

½ cup creamy Italian dressing

Ms. Dash Garlic and Herb seasoning

2-3 tablespoons extra-virgin olive oil

1 zucchini, diced

1 small yellow squash, diced

½ cup thinly sliced red onions

1 lg green bell pepper, sliced

¼ cup roasted red bell peppers diced


Place chicken breasts in Ziploc bag and pour Italian dressing over to coat.  Coat well and place in refrigerator and allow to marinate at least one hour.

Remove from marinate and sprinkle both sides of chicken with Ms Dash seasoning.  Grill over medium heat until cooked through and juices run clear.  Remove from grill and hold warm. 

Heat olive oil in skillet over medium heat.  Add prepared vegetables and sauté until vegetables are crisp tender.  Serve over chicken breasts.  Top with grated parmesan cheese if desired.
