Garlic Chicken


1 1/2 lbs chicken thighs
2 heads garlic, bottoms trimmed
1/2 teaspoon salt
1/2 teaspoon brown sugar or honey
3 dashes cayenne pepper
2 tablespoons oil
Chopped parsley, for garnishing


Brine chicken for minimum of 1 hour to overnight in your choice of brine solutions.  We used sea salt, garlic, and whole peppercorns.

Remove chicken from brine and pat dry.  Mix salt, brown sugar and cayenne pepper together and set aside.

Heat Dutch Oven over medium high heat and add just enough oil to cover bottom of pan. Fry the chicken, skin side down first, until the skin surface becomes nicely browned.  Turn chicken over and place 2 cloves of garlic among the chicken pieces.  Sprinkle brown sugar mixer over top of chicken. Cover and cook for approximately 20 minutes or until chicken is done and juices run clear.  Add top coals to Dutch Oven to finish browning chicken just prior to getting done.
