Creole Cabbage

2 tablespoons bacon drippings

1 medium head of cabbage, cored, and shredded

1 medium green bell pepper, seeded and chopped

1 medium onion chopped

1 (15 ounce) can diced tomatoes undrained or 3 cups diced fresh tomatoes

salt to taste

1 tablespoon Creole seasoning


Heat the bacon drippings in a 12 inch cast iron skillet over medium heat.  Add the bell pepper and onions, stir until tender.  Add cabbage, tomatoes creole seasoning and salt.  Simmer until cabbage is tender, 20 – 30 minutes.
