Boiled Baby Potatoes

1 medium onion, quarter

3 - 4 cloves garlic peeled and crushed

2 bags of mixed baby potatoes purple red and gold

chicken broth enough to cover potatoes

½ stick softened butter

salt and pepper to taste

¼ cup grated parmesan cheese



Add onion garlic and potatoes and chicken broth in pot hang over high heat.  Check potatoes with a knife or fork, when tender enough that they slide off, remove from heat and drain.  Add butter salt and pepper to taste.  Add cheese stir until potatoes are thoroughly covered.
