Bacony Wild Rice

Bacony Wild Rice

¼ pound bacon, diced
1 cup uncooked wild rice
1-1/2 cups sliced fresh mushrooms
4 medium green onions, thinly sliced
2 cups chicken broth
½ teaspoon salt
¼ teaspoon pepper

In a 12” Dutch oven cook bacon until crispy, remove and set aside reserving 1 tablespoon bacon drippings. Add onions and mushrooms and cook until tender. Add wild rice, chicken broth, salt and pepper and bring to broil, stirring occasionally. Reduce to low heat and simmer 45-60 minutes or until rice is tender and liquid has been absorbed. Stir in bacon bits, fluff with fork and serve.
