Asian Salad with Ginger

Asian Salad with Ginger Peanut Dressing


For the Salad

  • 1bag salad mix ( baby spinach, bok choy, and baby chard)
  • ½ small red cabbage, shredded
  • 2 cups prepared shredded carrots
  • 1 red bell pepper, sliced into bite-sized piece
  • 1/2 cup chopped fresh cilantro

For the Dressing

  • 3 tablespoons creamy peanut butter
  • 2 tablespoons unseasoned rice vinegar
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 3 tablespoons honey
  • 1 tablespoon sugar
  • 2 large clove garlic, minced
  • 1-inch square piece fresh ginger, peeled and minced
  • 1 tablespoon sesame oil


  1. Combine all of the ingredients for the salad in a large mixing bowl.
  2. Combine all of the ingredients for the dressing and whisk together until smooth and creamy
  3. Pour the dressing over the salad and toss well. Serve immediately.
